Vanilla Brandy Ice Cream

Vanilla ice cream just got so much better. There are so many good local potstill brandies that have strong vanilla flavour profiles, that can work really well in this ice-cream.

And the best part – 15 minutes preparation time! Game on with this one. 

Ingredients: Vanilla Brandy Ice Cream

  • 3 cups heavy cream
  • 2/3 cups sugar
  • 1 teaspoon pure vanilla extract
  • Seeds scraped from 1 vanilla bean
  • 1/4 cup good Brandy (I would suggest something like the Uitkyk 10 year old estate brandy, or a strong vanilla flavoured brandy)

Directions: Vanilla Brandy Ice Cream

  1. Heat the cream, sugar, vanilla, and vanilla seeds in a small saucepan only until the sugar is dissolved.
  2. Be sure the sugar is dissolved – you will no longer feel any grittiness from the sugar if you rub some cream between your fingers.
  3. Strain into a bowl, cover, and chill very well.
  4. Add the Brandy and freeze the mixture in an ice cream freezer according to the manufacturer’s directions.
  5. Spoon into a freezer container and allow to chill in the freezer for a few hours before serving.
